This Almond Butter Cauliflower Smoothie Bowl tastes like dessert, a sweet treat, if you will. And it contains vegetables! What? Yes, it’s true. And it’s delicious, too! So run, don’t walk, to your nearest blender and get going. This incredible smoothie bowl is just waiting to be enjoyed! {Vegan or Paleo}

Wait, what? We’re putting cauliflower in a smoothie? You bet your smoothie bowls we are! Way back in the day, I saw recipes for smoothies containing cauliflower, and I could not even handle it. That can’t be, I thought. “You can’t even taste the cauliflower,” they said. I wasn’t even sipping a smoothie at that moment, but already I could taste the cauliflower. “It’s so rich and creamy,” they said. Yeah, in a fibrous, vegetable-y kind of way, I’m sure. Then I finally bit the bullet, threw some steamed-then-chilled cauliflower in a smoothie, and lo and behold, it was AMAZING!!!!!! Hence, today’s Almond Butter Cauliflower Smoothie Bowl.

No one in our house can quite put our finger on it, but this smoothie bowl tastes like toffee, maybe even a hint of chocolate (but without the chocolate). It depends on who you ask, really. K-Hubs, the girls, and I also love it just as much on day two as we do on day one. So it’s not like you have to make it and sip it or scoop it all in one sitting. You can make a batch or two to enjoy throughout the week. 

And, honestly, isn’t that what a cauliflower-infused smoothie bowl is all about? Sipping and scooping our way through the week with this deliciousness in one hand and a straw or a spoon in the other?

Almond Butter Cauliflower Smoothie Bowl ingredients

  • Cauliflower florets
  • Almond milk
  • Almond butter
  • Dates, pitted and chopped
  • Sea salt
  • Sweetener of choice (100% pure honey, 100% pure maple syrup, or agave nectar will work)

I bet you can swap out various ingredients, however, confession alert: I haven’t tried it. So play around with different milk alternatives, nut butters, and sweeteners. You just might discover a new flavor combo. And now that I’m writing that, my tastebuds want to get to work experimenting on new recipes, too.

How to add cauliflower to smoothies

Spiriteds, I love vegetables, I really do. But I didn’t always. And, looking back, I would have liked a recipe like this one. Because we can eat our sweets and have our vegetables, too. If the proof isn’t in the pudding, then it is definitely in this smoothie bowl. 

How can that even be, you ask? STEAM. 

Just like in the Perfect Hard-Boiled Egg recipe, we rely on steam in this recipe for the perfect consistency and flavor. And just to be sure, I made a batch WITHOUT steaming the cauliflower. There is, most definitely, a difference. So if you’re nervous about adding cauliflower to sweeter smoothie recipes, then put your mind at ease. It’s the steam-then-chilled cauliflower you want. Also, you can cool your cauliflower on the counter, chill it in the fridge, or freeze it, and all will be workable in this recipe. If you’re still in doubt, then let me tell you…

Steamed cauliflower is:

  • Neutral-flavored
  • Malleable
  • Creamy
  • Smooth

Steamed cauliflower does truly rival the avocado in the creamy consistency department, which is good in my book because while I absolutely crush on the avocado and all it offers, I like variety, too. Also, sometimes I miss that 37-second window when avocados are ripe and ready for consumption.

And any excuse to get my vegetables is an excuse I want to claim for myself and anyone else who needs it. So, our Almond Butter Cauliflower Smoothie Bowl is deliciously creamy, full of rich flavor, and comforting all in one toothsome recipe.

  • Yield: 1 1/4 cups 1x

Ingredients

Scale
  • 1/2 cup cauliflower florets, steamed and chilled
  • 1 cup almond milk
  • 2 tablespoons almond butter
  • 2 dates, pitted and chopped
  • Pinch of sea salt
  • 2 tablespoons 100% pure honey (paleo) or agave nectar (vegan), optional

Instructions

  1. Combine all ingredients in a high-speed blender and mix until smooth.
  2. Serve immediately and top with almonds, almond butter, fresh fruit, or a drizzle of your favorite sweetener!
  3. Refrigerate leftover smoothie and consume within about 2-3 days.

Notes

  • Prep time includes an estimated amount of time for steaming cauliflower. However, actual steaming times may vary.
  • If you’d like to steam a head of cauliflower and use it for several batches of smoothie, then I suggest freezing the steamed cauliflower once it has cooled. When you’re ready to make a batch, plop the frozen cauliflower in the blender with the other ingredients, and you’ll be set to go. 
  • I like to make several batches of smoothie at once and store them for the first half of the week! This smoothie will taste best for about 2-3 days.
