So run, don’t walk, to your nearest blender and get going. This incredible smoothie bowl is just waiting to be enjoyed! {Vegan or Paleo}

Ingredients

  • 1/2 cup cauliflower florets, steamed and chilled
  • 1 cup almond milk
  • 2 tablespoons almond butter
  • 2 dates, pitted and chopped
  • Pinch of sea salt
  • 2 tablespoons 100% pure honey (paleo) or agave nectar (vegan), optional

Instructions

  1. Combine all ingredients in a high-speed blender and mix until smooth.
  2. Serve immediately and top with almonds, almond butter, fresh fruit, or a drizzle of your favorite sweetener!
  3. Refrigerate leftover smoothie and consume within about 2-3 days.

Notes

  • Prep time includes an estimated amount of time for steaming cauliflower. However, actual steaming times may vary.
  • If you’d like to steam a head of cauliflower and use it for several batches of smoothie, then I suggest freezing the steamed cauliflower once it has cooled. When you’re ready to make a batch, plop the frozen cauliflower in the blender with the other ingredients, and you’ll be set to go. 
  • I like to make several batches of smoothie at once and store them for the first half of the week! This smoothie will taste best for about 2-3 days.
