Seriously, these are drippy goodness. K-Hubs and I barely came up for air while sinking our teeth into these. And we didn’t share with the girls either. Because we are horrible people and sharing is hard. Furthermore, these Loaded Shrimp Tacos boast a peppered olive oil drizzle that is next-level ridiculous. I can’t even with it. Except I did. K-Hubs did, too. We ate all of them in one sitting, or technically, one standing, since we stood over the kitchen sink while devouring these seafood tacos. Worth. It.

Let them chill in the fridge for about 30 minutes or so. Otherwise, your tastebuds will lose the will to live. And we don’t want that. Speaking of tastebuds, the beauty of this recipe is YOU decide what you want for toppings. I love tomatoes, onions, and pepper. But you can add whatever reds, oranges, greens, or purples you like. The options are endless!

Okay, first things first about these delightful bites: they come with their own homemade seasoning mix. Chicken meets spices meets olive oil meets tomatoes, celery, onion, and cilantro. Veggies for the win. Does dinnertime get any better? Well, yes, it can, if you round out your meal with Pineapple Mango Smoothie and add a dash of rum to it. Or so I’ve heard.

Egg and tuna salads often get turned into sandwiches, which then leads to bread. And for those who can’t have gluten or grains or dislike the taste of gluten-free breads (not to mention the price), this is a sticky wicket. In this recipe, however, we forgo the bread in favor of tomato cups. This delicious alternative takes egg salad to the next level for sure. And it’s easy to change out with lettuce or spinach if you don’t tolerate tomato (as is the case with a few in our family). Mayo-Free, Paleo Egg Salad is perfect as a stand-alone salad or as the main course. Either way, your tastebuds will thank you.

Seriously, if you dislike greens and veggies, may I still suggest you give this one a try? It is so freaking ridiculously good. OMIGOD. I had no idea greens could be so out-of-this-world tasty. K-Hubs and I dug into these and proclaimed Lemon Avocado Dip the perfect cherry on the top, as it were. You can keep these fajitas completely light and veggie-oriented without adding a dip. However, I liked adding a little bulk to this main course meal. Dips or pesto are totally the way to go. Really, the options are endless.
