  • 1 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup almond milk
  • 1 egg
  • 5 tablespoons coconut oil, melted
  • 3 tablespoons maple syrup
  • 3 tablespoons agave nectar or 100% pure honey
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1 pound bacon, crispy-fried and crumbled, divided
  • 24 tablespoons bacon fat, still in liquid form


  1. Set oven to 350 degrees.
  2. Fry bacon in a shallow frying pan to a crispy consistency. Place fried bacon on a plate between two paper towels or napkins to absorb any excess grease.
  3. While the bacon is frying, in a large bowl combine the almond flour, coconut flour, baking soda, cinnamon, allspice, and nutmeg. Stir in the melted coconut oil, maple syrup, agave nectar or honey, apple cider vinegar, and vanilla.
  4. In a separate bowl, whisk together the almond milk and egg and pour into the batter, stirring until evenly mixed. Add in the bacon grease and stir evenly.
  5. Add approximately half crumbled bacon pieces. If the batter is sticky, you may need to knead the crumbled bacon pieces by hand to prevent clumping.
  6. Pour remaining bacon pieces on top as the “streusel.”
  7. Pour mixture into an 8×8 glass baking dish and bake covered with foil for 15 minutes, rotating one time during baking. Remove foil and bake another 5 minutes. Bake another 1-2 minutes uncovered or until inserted toothpick comes out clean. Let cool slightly and top with nuts, seeds, or granulated sweetener. Serve immediately. For best results consume within 24 hours.
