Vegan Strawberry Cherry Popsicles

These Vegan Strawberry Cherry Popsicles are a crowd-favorite, family-favorite recipe in our house! Made with fresh and frozen fruit, nondairy milk, and your sweetener of choice, this is one recipe that’s easy to adapt to your needs without compromising the flavor! Paleo option included. {Vegan + GF}

To make the popsicles:

  • 2 cups fresh strawberries, rinsed and halved
  • 1 cup frozen cherries, pitted
  • 1 cup almond milk
  • 2 tablespoons agave nectar (vegan ) or 100% pure honey (paleo), adjust amounts as desired

Instructions

  1. In a high-speed blender combine all ingredients and blend until smooth. Pulse the blades a few times to make sure fruit isn’t stuck underneath the blades in the container.
  2. Then pour the popsicle mixture into popsicle moulds and freeze for several hours.
  3. To remove the popsicles from the moulds, let them sit at room temperature for a few minutes or run them under cool water. Gently rock the popsicle handle from side to side to loosen the treat. Then carefully remove the popsicle from the mould. If you feel resistance, then let the popsicle sit a little longer or run it under cool water again. Be careful not to pull too hard on the handle or you’ll run the risk of breaking the popsicle into pieces.

Notes

  • Use a combination of fresh and frozen fruit. This is especially true if you’re working with larger fruits such as whole strawberries. I find if I use too many frozen fruits (or they’re too large), it’s hard on the blender blades. 
  • When rocking the popsicle handles, move them left to right instead of front to back (which will only bend the handle without loosening the treat). 
  • If you don’t have popsicle moulds, then ice cube trays and wood craft sticks will also work. 
  • Depending on your freezer, it may take two hours or longer to freeze the popsicles. If you have the time, make them the night before you need them.
