Vanilla Coffee Protein Smoothie

This Vanilla Coffee Protein Smoothie is sweetened with agave nectar, vanilla, and dates! Adjust the sweetness and coffee vibe as desired! And in place of a banana, we’re using steam cauliflower for a rich, creamy, neutral flavor! {Vegan + GF}

Ingredients

  • 1 cup coffee, chilled
  • 1/2 cup almond milk
  • 2 tablespoons agave nectar (more or less to taste)
  • 1/2 teaspoon vanilla
  • 1 handful steamed-then-frozen cauliflower
  • 2 scoops vanilla-flavored protein powder
  • 1/4 cup dates, pitted and chopped
  • 1 handful ice cubes, optional

Instructions

  1. Brew a batch of coffee, let it cool. Once the coffee is cool enough, in a high-speed blender, combine the cold coffee, almond milk, agave nectar, vanilla, frozen cauliflower, protein powder, and dates and mix on a high speed until smooth. If the smoothie gets hot, then blend in a handful of ice cubes.
  2. Pour into serving glasses and enjoy right away. Alternatively, you can store your smoothie in the refrigerator for about 2-36 hours. It will thicken in the refrigerator as it sits.

Notes

  • For additional flavors, add a dollop of almond butter or a handful of chia seeds or coffee beans.
  • For best results, buy fresh cauliflower and chop it down into florets. Steam the florets immediately, let cool, and store in small quantities in freezer-safe containers. Use a handful of florets in each Vanilla Coffee Protein Smoothie batch
