Friends, this recipe is a K-Hubs original. I mean, technically, there are all kinds of similar recipes in the near and far corners of the internet webs, but this recipe, the one I’m sharing today, comes from K-Hubs. And its shear amazingness is all in the timing. And it came about because I needed a quick and filling meal before I headed off to class. K-Hubs threw this together, and it was the best eggs and avocado recipe I had ever had.
So now it gets its own place on the blog, and I’m all kinds of ready.
The truth is, the ingredients couldn’t be more straightforward. Eggs + avocado + pepper = INCREDIBLE.
But I could never quite achieve the results because I never quite understood the timing of the sunny side up egg. And now we have it. Because K-Hubs is patient, and he pays attention to those things. Friends, we shall all achieve greatness with this recipe. And is it best served for breakfast, lunch, or dinner? Does anyone ever really know these things? I know I sure don’t. What I do know is that I eat this meal at all times of the day. Breakfast, lunch, or dinner? Yes.

INGREDIENTS FOR SUNNY SIDE UP EGGS WITH AVOCADO:
- 2-3 eggs
- Coconut oil
- 1 avocado
- Sea salt and coarse black pepper
- Additional toppings as desired
HOW TO MAKE SUNNY SIDE UP EGGS WITH AVOCADO:
- In a large frying pan, melt coconut oil. Once oil is warm but not sizzling, crack the eggs into the pan. Make sure each egg has enough room to spread a little. With the stove burner set squarely between low heat and medium heat, cook eggs until the whites are opaque rather than translucent and the yolks are firmly in place. Times may vary by appliance, but this process will take approximately 15 minutes because we are working with a low but steady heat setting. You can turn up the heat to reduce cooking times, however keep a careful eye to make sure the eggs don’t go from undercooked to burned.
- While the eggs are cooking, slice the avocado and lay the slices out either layered on top of each other or in the shape of a circle, completely filled in. Sprinkle sea salt on the avocado slices.
- Carefully slide the turner under each egg and then place eggs on top of avocado slices and garnish with coarse black pepper. If desired, add sliced green or purple onions, tomatoes, or black olives.
