Spicy Garlic-Roasted Broccoli

Spicy Garlic-Roasted Broccoli is made with fresh garlic and your choice of either red pepper flakes or ground turmeric for a delicious vegetable side dish that’s anything but boring! Made with just a handful of ingredients, these broccoli florets are ready in under 30 minutes! {Paleo-friendly}

Friends, I don’t know where you’re at with your vegetable game. But if you’re bored with it, may I please show you my new favorite broccoli recipe? Because it’s incredible and tasty and full of zip and also some zap. I was inspired by Jess’ Garlic Roasted Broccoli recipe at Paleo Grubs.  This Spicy Garlic-Roasted Broccoli is the stuff of which side dish dreams are made. And it’s how I want to eat broccoli now. It’s just a STRAIGHT UP YES from me. I WILL eat my vegetables. And I will eat them proudly. 

Cruciferous greens coated in coconut oil and pressed garlic, followed by turmeric or red pepper flakes and then roasted for a deeper flavor? My only follow-up response is to ask why I didn’t try this sooner. Vegetables don’t have to be boring. And they don’t have to be complicated to be tasty. In fact, Spicy Garlic-Roasted Broccoli is simple to make. The biggest question will be how long you want to roast your veggies, and that will depend on how roasted you want them to taste.

So let’s ditch the boring vegetable recipes and replace them with flavorsome recipes like this one!

SPICY GARLIC-ROASTED BROCCOLI INGREDIENTS:

Here are the ingredients you’ll need to make your own delicious, savory side dish!

  • Fresh broccoli florets. These veggies will shrink as they roast, so I start out with MORE broccoli than I might otherwise serve.
  • Coconut oil. On average you can assume about one leveled tablespoon of coconut oil per cup of broccoli florets. I typically err on the side of less coconut oil, rather than more, because I like my roasted veggies on the crispier side of textures.
  • Fresh garlic. I usually do about one clove for every three cups of broccoli. If the cloves are small, I’ll add another one for good measure. Add how many you want based on how garlicky you want your broccoli to taste.
  • Optional toppings and mix-ins: Red pepper flakes. I don’t follow a specific amount of red pepper flakes. Instead I sprinkle enough flakes to cover the tops of the florets. Turmeric. For this spice I DO use an amount. I start out with 1/8 – 1/4 teaspoon for the six cups of broccoli, and then only add more if I want to. I haven’t tried both flavors at the same time.

HELPFUL EQUIPMENT TO USE:

Below are a few pieces of equipment I like to use whenever I roast vegetables. 

  • Flat baking sheet. Rather than using a cake pan, I suggest using a baking sheet without sides.  One used to baked cookies would be perfect. This will allow the florets to roast more thoroughly and evenly.
  • Parchment paper. This will soak up excess oil, helping prevent soggy florets.

HOW TO MAKE SPICY GARLIC-ROASTED BROCCOLI:

Below are the steps to make your own Spicy Garlic-Roasted Broccoli dish.

  1. Set oven to 400 degrees. Line a baking sheet with parchment and set aside.
  2. In a large mixing bowl combine the broccoli, melted coconut oil, and pressed garlic. Stir until the broccoli florets are evenly coated. If desired, add ground turmeric. Spread florets onto baking sheet without overlapping. If necessary, roast the broccoli in multiple batches.
  3. Roast for 15 minutes or until desired level of crispiness is achieved. Rotate baking sheet once halfway through the roasting process. If adding red pepper flakes, sprinkle them over the broccoli at the same time you rotate the baking sheet. Once the roasting is complete, remove the florets from the oven, let cool, and enjoy.

NOTE: While prepping the recipe, the melted coconut oil may cool quickly once it is stirred into the raw broccoli. To prevent it from congealing, transfer the broccoli from the bowl to the baking sheet to the oven as quickly as possible.
