Raspberry Vinaigrette Dressing

Raspberry Vinaigrette Dressing is as delicious to enjoy as it is pretty to look at! Drizzle it over berry and green leaf salads or use it as a fruit dip for something different! Additionally, you can make this recipe using fresh or frozen raspberries, so no matter the weather outside your window, this dressing is always in season! {Paleo or vegan}

Ingredients

  • 2 cups raspberries (fresh or thawed)
  • 1/21 cup olive oil
  • 1 tablespoon apple cider vinegar
  • 1/2 cup 100% pure honey (paleo) or agave nectar (vegan)
  • 1/8 teaspoon sea salt

Instructions

  1. Rinse fresh raspberries or thaw frozen raspberries. Then combine all ingredients in high-speed blender and mix on medium speed until smooth. Stream in more sweetener or olive oil, as desired.
  2. Add any additional mix-ins and blend until smooth.
  3. Next transfer to glass jars and refrigerate for about 3-4 days.

Notes

  • Use fresh or thawed raspberries. 
  • Adjust sweetener depending on flavor preference.
  • Add more olive oil or a splash of water for a thinner dressing.
  • Optional mix-ins include: fresh garlic, ground mustard, basil leaves, or lime juice.
