Raspberry Lime Sparkling Water

Raspberry Lime Sparkling Water is a delicious, non-alcoholic, party-friendly drink that guests will love! Whether you’re hosting or going, it’s super easy to make ahead of time. Oh, and it’s also perfect for a party of one or two, a good book, or a calm evening on the porch. {GF + VG}

Ingredients

  • 1/3 cup water
  • 1 pint fresh raspberries
  • 23 tablespoons sweetener (See Notes)
  • Juice of one lime (See Notes)
  • Ice cubes
  • Sparkling water

Instructions

  1. In a saucepan, bring water, raspberries, and sweetener to a boil. Reduce heat and simmer for about 5-10 minutes, or until the raspberries soften and are easily mashed with a spoon or potato masher. Remove from heat to cool. 
  2. When the raspberry mixture is cool enough to handle, press it through a mesh strainer into a bowl. Press down on the raspberries using the rounded side of a spoon. This will extract as much of the liquid from the pulp as possible. Then add the lime juice to the raspberry liquid and continue to let cool.
  3. Spoon 2 tablespoons to 1/4 cup raspberry mixture into 8-ounce drinking glasses. Then top with ice cubes and pour sparkling water over the ice. Garnish with fresh raspberries or slices of lime.
  4. For best results, do not mix the raspberry mixture and sparkling water together until just prior to serving. Store leftover raspberry juice in a glass jar for up to one week and then add it to a glass with ice, sparkling water, and garnishes when you’d like a refreshing sip.  

Notes

  • Take your pick of sweetener. I find agave nectar works really well. You can also try 100% pure honey or a few drops of liquid stevia, if desired.
  • Add the juice of one lime about 1/2 tablespoon at a time, until you get the right amount of zing!
  • Yields will vary. But on average, you’ll have about 1 cup to 1 1/4 cup, or 4-5 servings per batch.
