Happy National Daiquiri Day, Spiriteds! In a timely twist of fate, I have just the recipe for you. A few weeks ago on Facebook I ruminated on the idea of turning our Raspberry Lime Daiquiri recipe into popsicles for adults. Why should the kids have all the fun? Popsicles are for everyone, or, at least, they should be. Since then, I’ve been tinkering in the kitchen and now we have Raspberry Lime Daiquiri Popsicles! A combination of raspberries, red grapes, fresh lime juice, and a splash of rum beat the heat and tantalize the taste buds.
Figuring out just the right popsicle mould, freezing temperatures and times, and removal techniques proved to be deliciously challenging. While I worried about these popsicles turning into a brittle mess, I ended up with the opposite problem. Since alcohol doesn’t freeze at the same temperature water does, we ended up with a goopy mess that tasted all too good! In fact, in the early batches, K-Hubs and I scarfed down the popsicles as they melted all over the counter, until I realized aloud, “Um, K-Hubs, I think we should pace ourselves. These aren’t exactly alcohol-free!”
Bless that literal mess.
However, in the end, we discovered a few tantalizing ways to enjoy these Raspberry Lime Daiquiri Popsicles, and below are our findings!
Option A using cute popsicle moulds
- Set freezer to a colder temperature and then freeze popsicles overnight.
- When removing the popsicle from the mould, do NOT run under warm water ~ a splash or two of cold tap water should do the trick. Then gently rock the popsicle stick back and forth to separate the popsicle from the mould.
Option B using ice cube trays
- Since this version will be a little top heavy, cut popsicle sticks down to about 1/3 or 1/2 their original. If necessary, pour the mixture into the ice cube tray and let it harden in the freezer for a few minutes before inserting the popsicle sticks.
- Set freezer to a colder temperature and then freeze popsicles overnight.
- Gently pry popsicles out of the tray using a table knife. You may only need to loosen one side to successfully remove the entire popsicle.
In either scenario I love to keep a glass nearby to catch any frothy deliciousness that may melt. And these variations and tips might make Raspberry Lime Daiquiri Popsicles sound particularly difficult to make, but do not let the details deter you. Like LinkedIn, there are several ways to do the same thing, making the experience feel more complicated than it really is. No, these fruity popsicles are what summer is all about, and as for those grapes? Keep them in the recipe. There is something about a red grape that adds the right amount of sweet to offset the velvety kick of the rum, so make, taste, and ENJOY!
P.S. Savor these delights responsibly because while I super love them, they aren’t worth an accident or worse. We shall not risk life and limb for our popsicles.
Raspberry Lime Daiquiri Popsicles

Ingredients
- 2 cups frozen raspberries
- 1 cup red grapes
- 2 tablespoons lime juice
- 1/4 cup agave nectar (vegan) or 100% pure honey (paleo)
- 1/3 – 1/2 cup rum
- 1 cup ice cubes
Instructions
- Combine all ingredients in blender and mix until smooth. Pour into desired moulds and then freeze overnight.
- Remove from moulds just prior to serving.
