  • 2 pears, diced
  • 4 mandarin oranges, sliced
  • 6 ounces fresh raspberries
  • 1/2 red onion, diced (more as desired)
  • 1/4 cup 100% pure honey
  • Juice of 1/2 a lime
  • 1 cup walnuts or pecans
  • Salt and pepper, to taste, optional

Instructions

  1. Rinse leafy greens, drain them in a colander, and set them aside.
  2. In a large mixing bowl, combine pomegranate arils, pears, mandarin orange wedges, raspberries, and red onion. In a separate dish, combine honey and lime juice. Drizzle the honey lime dressing over the fruits and stir until coated.
  3. Just prior to serving, add the greens to the large mixing bowl with the fruit and gently stir the ingredients together. Alternatively, layer the lettuce on individual plates and layer with fruit mixture.
  4. Refrigerate leftovers for 1-2 days.
