Paleo Vanilla Muffins

  • 1/3 cup melted coconut oil (measure after melting)
  • 1/4 cup maple syrup
  • 1/4 cup coconut flour
  • 1 cup almond flour
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 1/4 tsp baking soda
  • 2 eggs, yolks separated from whites


  1. Set oven to 350 degrees.
  2. Whisk melted coconut oil, maple syrup, coconut flour, and almond flour, and baking soda in a medium size bowl.
  3. Add the vanilla extract and apple cider vinegar. Whisk until evenly mixed.
  4. Stir the egg yolks into the donut batter. If the mixture is too thick, use a fork.
  5. In separate bowl, beat egg whites at a medium to high speed until they form peaks, approximately 3 minutes, and then fold into donut mixture.
  6. Grease muffin pan and then pour mixture into cavities.
  7. Bake at 350 degrees for approximately 15 minutes or until toothpick comes out clean.
  8. For best results, eat within 24 hours.
