Paleo Tzatziki Sauce

Ingredients

  • 1 can full-fat coconut milk, refrigerated a few hours (or overnight) prior to making recipe
  • 1/4 cup fresh cucumber, peeled and finely diced
  • 2 tablespoons dill weed (more as desired)
  • 2 tablespoons lemon juice
  • 23 garlic cloves, pressed
  • 1/4 teaspoon sea salt
  • Pinch of garlic salt, if needed to reduce richness
  • Coarse black pepper as a garnish, optional

Instructions

  1. Skim coconut cream from top of can, making sure not to get any of the oil or liquid coconut milk at the bottom of the can. Scoop cream into a large mixing bowl and mash with a fork until it’s malleable enough to stir in additional ingredients.
  2. Add in cucumbers and dill weed. Then add lemon juice, garlic cloves, and sea salt. Add garlic salt if the flavor is too rich.
  3. Store covered in refrigerator for about 2-3 days.
