Ingredients

  • 2 pounds pears, peeled and sliced
  • 2 tablespoons 100% pure honey
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/41/2 teaspoon ground ginger
  • 1/8 teaspoon sea salt
  • Pinch of allspice

Instructions

  1. In a medium saucepan, combine the pears, honey, lemon juice, cinnamon, ginger, sea salt, and allspice and bring to a boil. Then reduce heat to a LOW-MEDIUM setting and cook covered for about 40-45 minutes. Stir frequently to make sure the ingredients don’t burn. As the pears cook, mash them slightly to make the blending process in Step 3 even easier.
  2. Next, simmer for another 5-10 minutes uncovered. As a rule, cook uncovered for closer to 10 minutes if there is excess liquid in the pan and closer to 5 minutes if the mixture has already thickened and is cooking hot.
  3. Remove from the heat and let cool for a few minutes before transferring the mixture to a high-speed blender. Puree the ingredients in the blender until smooth.
  4. Store in a glass jar in the refrigerator for up to one week. Sprinkle with more allspice just prior to serving, if desired.
