1 1/3 cups plus 2 tablespoons unsweetened shredded coconut flakes
1 1/4 cups almond flour
1/8 cup coconut flour
1/4 teaspoon sea salt
1/3 cup agave nectar (vegan) or 100% pure honey (paleo)
1/3 cup lemon juice
1 teaspoon vanilla
1/4 cup coconut oil, melted
1/2 tablespoon nuts or seeds (I used 1/2 tablespoon chia seeds in these photos)
Instructions
Combine dry ingredients in one bowl and wet ingredients in another. Pour wet ingredients into dry ingredients and whisk until blended. Add chopped nuts or seeds at this stage, if including.
Refrigerate dough for one hour to chill.
Roll into small bites, approximately 1/2 inch in diameter.
