Mayo-Free Paleo Egg Salad

Tomatoes filled with paleo egg salad | via


  • 2 tomatoes, halved from top to bottom with centers scooped out
  • 5 eggs, hard boiled and chopped
  • 1 avocado, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup green onion, sliced
  • 1 stalk celery, sliced
  • 2 tbsp olive oil
  • 1 pinch of sea salt
  • Dash of garlic salt
  • Dash of onion salt
  • Pepper


  1. Combine chopped eggs, red onion, green onion, avocado, and celery in a bowl.
  2. In a separate bowl, combine olive oil, sea salt, garlic salt, and onion salt.
  3. Pour olive oil mixture over egg mixture and stir evenly.
  4. Fill tomatoes with egg salad and garnish with pepper.
  5. Serve immediately.
