Cilantro and Avocado Make These Loaded Shrimp Tacos Come Alive

Ingredients

  • 15 medium-sized shrimp (fresh or thawed)
  • Olive oil for sautéing*
  • Dash of pepper*
  • 1 head butterhead or romaine lettuce
  • 1/4 cup green onions, sliced
  • 1/4 cup red onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/2 cup cherry tomatoes, halved (can also use grape tomatoes)
  • 1/2 avocado, cubed
  • 1/8 tsp sea salt
  • *Increase amounts to create a drizzle that can be poured over the top of your tacos. The more the merrier.

Instructions

  1. Sauté shrimp with olive oil and pepper until cooked, about 5-6 minutes.
  2. Layer lettuce leaves on separate plate (if using butterhead, the taste will be amazing, however plan to use extra leaves – you may need to adhere them to one another with toothpicks or skewers, or just eat them really fast like we do!)
  3. Layer lettuce leaves with onions, cilantro, and tomatoes. (Go halvsies on amounts if you want to create a layered taco)
  4. Top with shrimp and avocado (Again, go halvsies if you want to layer)
  5. Add remaining onions and herbs as well as remaining shrimp and avocado.
  6. Drizzle with peppered olive oil from skillet, desired.
