Lemon Garlic Roasted Asparagus is a citrusy-garlic veggie side dish that is ready to go in about 30 minutes and only needs five whopping ingredients to make! Vegetable recipes never tasted so good! {Paleo + Vegan}

If, like me, you’re used to ignoring asparagus, may I suggest a perusal of, followed by a second glance at, this Lemon Garlic Roasted Asparagus recipe? It is absolutely fantastic. I’ve been on a roasted vegetable kick lately (Spicy-Garlic Roasted Broccoli is the most recent evidence prior to today), and I don’t plan on stopping anytime soon.

Whereas canned and frozen asparagus often turn out soggy, this roasted asparagus recipe is juicy, crispy, and savory. The citrusy lemon balances out the piquant garlic. The coconut oil gives the asparagus a buttery flavor, and all without adding any dairy to the recipe. Ultimately, Lemon Garlic Roasted Asparagus is an almost decadent side dish one might expect to find in a fancy restaurant.

To get a balanced flavor, I suggest adding the garlic and sea salt to the melted coconut oil. But you can sprinkle the sea salt and pressed garlic on the asparagus separately, if you wish. Roasting times are a guideline and depend on how roasted you want the asparagus to taste. As they crisp, the stalks will shrink in size, too. So that’s another consideration. If you want bulk, then roast for a shorter time. If you want crispy-crunchy, then roast for the full 25 minutes.

LEMON GARLIC ROASTED ASPARAGUS INGREDIENTS:

This is such a rich vegetable recipe that you might expect the ingredient list to be long and complicated. But it’s not. Short, sweet, citrusy, and savory. That’s how we’re going to do things!

  • Fresh asparagus. Remove the tough ends of the stalks.
  • Fresh garlic. Pressed or minced.
  • Coconut oil. Coats the asparagus well, holding all the ingredients together.
  • Sea salt. Stirred in the coconut oil or sprinkled over the top of the asparagus.
  • Lemon juice. Fresh or bottled will work.

HOW TO MAKE LEMON GARLIC ROASTED ASPARAGUS:

It helps to have a baking sheet for this recipe. This ensures the asparagus stalks roast evenly.

  1. Set oven to 400 degrees. Line a baking sheet with parchment paper and set aside.
  2. In a small dish, combine the melted coconut oil, sea salt, and pressed garlic. Set aside.
  3. Trim tough ends from the asparagus stalks and discard. Place asparagus in a large mixing bowl and drizzle with coconut oil mixture. Spread asparagus stalks on the parchment-lined baking sheet, without overlapping them. Bake for 20-25 minutes, rotating once halfway through the cook time. Serve immediately.

NOTE: This recipe is best enjoyed right after roasting.

Ingredients

  • 1 1/2 tablespoons coconut oil, melted
  • 1/8 teaspoon sea salt
  • 4 cloves fresh garlic, pressed or minced
  • 1 pound fresh asparagus, tough ends of stalks removed
  • Juice of 1/2 a lemon (about 1 tablespoon of juice)

Instructions

  1. Set oven to 400 degrees. Line a baking sheet with parchment paper and set aside.

    Notes

    • Fresh lemon juice or bottled lemon juice will work. Add more or less as desired.
