Green Apple Ginger Juice. Friends, I DON’T EVEN KNOW HOW TO TALK ABOUT IT. Like…I make this beverage ON THE REGULAR. As in, weekly. As in, it’s just in the fridge, waiting to be sipped. This is how we roll. It’s honestly one of my favorite drinks of all time. If you ever wonder whether food bloggers actually make their own recipes when no one is looking, let me just tell you, YES WE DO. It’s an all caps kind of moment.
And if you’re in the market for a green juice that is sweet but full of earthy greens, filling but not heavy, and flavorsome but not complicated to make, then you’re in the right place. In a word, Green Apple Ginger Juice is invigorating. Each ingredient plays an important role. The natural sweetness also means you don’t have to overload on honey. So you can enjoy your paleo green juice without riding the effects of a sugar high. This is called winning, and this is how we do it.

Green Apple Ginger Juice ingredients
If you are looking for a nutrient-dense, refined sugar-free juice recipe, then Green Apple Ginger Juice is right up your alley!
- Green apples. Sour green, Granny Smith-style, apples are right at home here. Their tartness is PERFECT with the other ingredients, so you end up with a sweet ’n slightly sour drink. So. Good.
- Cucumber. I don’t peel the cucumber. Instead I slice it into thin pieces and throw them in the blender “as is.”
- Fresh lemon. Nothing beats fresh lemons. I remove the skin/rind and the seeds and then slice the lemon into a few chunks so they blend more easily.
- Fresh ginger. Can you use dried spices in this drink? I mean, technically, yes, you can. But fresh ginger makes all the difference. And it’s a totally different experience than dried ginger.
- Spinach. Fresh is the way to go here. You can use kale, if you like. But spinach blends really nicely in this drink if you want the greens without the bitter taste.
- 100% pure honey. “To taste” and depending on your tastebuds. I LOVE how honey complements lemon and ginger (which I discovered when I made Lemon Ginger Tea), so that’s what I use. And I love it as a mix-in if I inadvertently get carried away with the ginger or the lemon is bigger than usual. You can go without sweetener or select another option, if desired. Agave nectar would work for a vegan variation.

How to make Green Apple Ginger Juice
High-speed blenders work best in this recipe because they often come with tampers that can be used to push the ingredients into the blades, and they’ll pulverize the fibrous components of the fruits and vegetables. If you don’t have a high-speed blender, you may need to add more water or add the ingredients in small handfuls at a time.
- Add water, green apple, cucumber, lemon, ginger, spinach, and ice cubes (in that order) to a high-speed blender and mix on high until the ingredients have blended. Use tamper to blend the ingredients and push them into the blades.
- Drizzle honey into the blended mixture and continue mixing until combined. Enjoy right then and there or store in the refrigerator for about 1-2 days.
Green Apple Ginger Juice best practices
Green Apple Ginger Juice is so easy to make it’s almost ridiculous. But there are a few tips to help you get the most out of the recipe!
- Go easy on the spinach. I add no more than one handful. If you love spinach, then add more. But otherwise, one handful adds the right amount of earthy flavoring without overpowering the other ingredients.
- In spite of how much I love it, I find fresh ginger hard to measure. I would say, start off with two thin slices of ginger and taste-test before adding more.
- If your green juice gets a little warm while you blend it, especially if you need to blend longer than 30 or so seconds to break down the fibrous content, then add a few extra ice cubes just as you finish blending.
- This green juice is best enjoyed within about 1-2 days. The flavors, especially the spinach, are freshest and most complementary during that period.
- Yields are an approximation based on how much water, spinach, or ice you add. But a standard recipe should yield about 4 cups of green juice. Ish.

- 1 1/2 cups cold water
- 2 green apples, sliced with skins left on
- 1 cucumber, sliced
- 1 lemon, skin/rind and seeds removed
- 2 pieces fresh ginger, peeled
- Handful of fresh spinach
- 2 handfuls of ice
- 100% pure honey or agave nectar, to taste
Instructions
- Combine water, green apples, cucumber, lemon, ginger, spinach, and ice cubes (in that order) in a high-speed blender and mix on HIGH until the ingredients have dissolved.
- Then add the honey or agave nectar and continue mixing until well combined.
- Enjoy right then and there or store in the refrigerator for about 1-2 days.
Notes
- Average-sized lemons and cucumbers work best in this beverage. If you have larger lemons and cucumbers to work with, then consider starting with half and add more only if your tastebuds desire. This should help you maintain the correct flavor balance.
- To create a pulp-free drink, pour the juice through a wire mesh strainer prior to adding the sweetener.
- If the juice becomes warm during the blending process, then add an extra handful of ice cubes to the container and continue blending.
