Gluten-Free Almond Butter Oatmeal Bites

These Gluten-Free Almond Butter Oatmeal Bites are a delicious no-bake snack treat that combines the right amount of sweetness with the right amount of hearty oatmeal.   • 1/2 cup almond butter
  • 1/4 cup coconut oil, melted
  • 4 dates, pitted and chopped
  • 2 tablespoons 100% pure honey, 100% pure maple syrup (vegan), or agave nectar (vegan)
  • 1/8 teaspoon sea salt
  • 1 cup gluten-free old-fashioned rolled oats 

Instructions

  1. Line a baking sheet with parchment paper and set aside. In a high speed blender combine the almond butter, melted coconut oil, chopped dates, sweetener, and sea salt. Blend on a MEDIUM to HIGH speed until the ingredients, especially the dates, are blended. You may need to stop blending and, using a small spatula, scoop the mixture from underneath the blades to make sure there aren’t any date pieces stuck underneath. Blend until the mixture is smooth.
  2. Then transfer the almond butter mixture from the blender container to a medium-sized mixing bowl and add the oatmeal. Stir it with a large spoon or knead the oatmeal in by hand.
  3. Next chill the dough for about 30 minutes or until it can be easily formed into balls. When the dough is firm enough, roll it into one-inch balls and place on the parchment-lined baking sheet. Place the baking sheet in the refrigerator for about 15 to 30 minutes. Then transfer the almond butter bites to an airtight container. Layer them with trimmed pieces of parchment from the baking sheet so they don’t stick to each other.
  4. Keep refrigerated and consume within about a week.

Notes

Optional add-ons:

  • Coarse raw sugar
  • Melted chocolate (for dipping or drizzling)
  • Shredded coconut (for dusting)
  • Finely ground nuts, either mixed or matching the nut butter used (for dusting)

Sub another nut butter of choice, if desired.
