No matter how many times I tried to tell my brain that beetroot powder doesn’t taste like strawberries, raspberries, or Hi-C when I first bought it, my brain could not compute reality. In reality, however, the flavor is much earthier and rustic. Not even remotely fruity. Also, you might need a mask when you open the package because the texture is also like dried clay.

Wow, Morgan, that’s quite the ringing endorsement for beetroot powder. /s Why even both with it if it’s going to fill the air with dusty particles and NOT TASTE LIKE STRAWBERRIES?

Because of Dairy-Free Pink Latte, that’s why. Beetroot powder, when combined with almond milk, coconut milk, your choice of sweetener, and warming spices, is THE PERFECT WINTRY DRINK. All of a sudden, I began to see just why people go nuts over this ingredient. Sure, it’s pretty. But it’s also pretty comforting and satisfying.

There are also several ways to enjoy this beverage. You have intense flavor or mild flavor. Then there’s hot or cold. And last but not least, you can experiment with ground spices or whole spices. Honestly, the sky is the limit for this pink drink. I can’t explain why, but I happen to enjoy the intense version cold and the mild version warm. So I just sip, sip away with utter delight!

This beetroot powder drink is

Dairy-Free Pink Latte ingredients

  • Almond milk and coconut milk. I love almond milk in this recipe, but you can switch it up with your own non-dairy milk alternative. And if you do drink milk, then, yes, regular milk will also work. The full-fat coconut milk adds a rich flavor and creamy texture.
  • Beetroot powder. This earthy-flavored, clay-like powder creates a gorgeous color. And while I can’t speak to all its health benefits, definitely read packaging labels before selecting a beetroot powder brand, if, in fact, you are sipping this beverage for more than it’s beautiful color.
  • Spices. Ground cinnamon, ginger, allspice, and cloves add a warm flavor to this beverage. Adjust the quantities of these spices to your liking.
  • Sweetener. Agave nectar (vegan), 100% pure honey (paleo), and 100% pure maple syrup (paleo or vegan) are delicious in this drink. 

Side note: Dairy-Free Pink Latte is absolutely and completely a customizable beverage. Adjust the amount of spices and sweeteners. Play around with different milk alternatives. I fell even more in love with this drink when I added the full-fat coconut milk. It was a *chef’s kiss* discovery that I only found because I played around with different ideas.

How to make Dairy-Free Pink Latte

  1. Add the almond milk and coconut milk to a small saucepan and heat to just under a boil. Then stir in the beetroot powder, spices, and sweetener. Whisk briskly until the ingredients are dissolved. If any clumps form, then press them against the side of the saucepan with a fork to dissolve.
  2. Heat to desired temperature, remove from heat, and transfer to heatproof mugs. Alternatively, transfer the beverage to a high-speed blender first, blend on HIGH to create a foam top, and then transfer to heatproof mugs.
  3. To make an iced latte, add a few small ice cubes to the heatproof mugs. Or to use other drinking glasses, let the pink latte cool first before transferring to the glasses, and then add the ice cubes.
  4. Refrigerate leftovers in an airtight jar for about two days

Can I use fresh or whole spices instead of ground?

Yes, absolutely. The taste will be milder unless you have time to allow for extra simmering. To do this, bring the milk to just under a boil. Add the fresh or whole spices, cover the saucepan, and let the liquid simmer for about 10-20 minutes without ever boiling (so you don’t lose much liquid to evaporation). Then remove from heat, pour the latte through a mesh strainer, discard the ingredients, and serve your pink drink as planned.

Quantity suggestion: Start with one cinnamon stick (or two for a more intense flavor), approximately two rounds or slivers of fresh ginger (peeled first), two whole cloves, and a pinch of allspice. Adjust as desired for a stronger or milder flavor.

  • 1/2 teaspoon allspice
  • 1/4 teaspoon ground cloves

Mild:

  • 1 teaspoon beetroot powder
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon allspice
  • Pinch of ground cloves
