Creamy Avocado Egg Salad is the perfect paleo comfort food! | spiritedandthensome.com Spiriteds, we hit a milestone in our house last week. Toodle had her first overnight camp out. She was all over it. I, on the other hand, was a nervous wreck. Why? Probably because, much like a flash of lightening, it struck me just how quickly she’s growing. I was so overcome with “the feelings” I told K-Hubs he would have to finish packing her camping gear. It was reminiscent of that time I dropped Twinkle off on her first day of preschool and unexpectedly cried so much I pulled away and snapped exactly ZERO pictures of her walking into school. All ended well (in both cases), and there is absolutely no segue into today’s Creamy Avocado Egg Salad recipe, other than to write it as I just did, and to say I have all the conundrums about my babies growing up.

Ooh, I might have a segue for you. If you, too, are having “the feelings” about something and need a little healthy emotional eating, THIS STUFF IS IT! It’s gluten-free, paleo, and mayo-free. Basically, it just works. I feel responsible and on top of things when I eat it. I have absolutely no idea what those things are. But I do know that I am eating avocado, eggs, onions, and celery seed, and that has to count for something.

You know what else I love about this recipe? It stays fresh overnight. Another reason to feel mature, like you have this adulting thing ON LOCK. Usually avocados are brown within what feels like minutes. However, in this case, Creamy Avocado Egg Salad looks and tastes just as good the next day as it did the second you finished stirring. So now you can make a batch the night before and take it to work the next day. A total time-saving, sanity-preserving recipe in my book.

Creamy Avocado Egg Salad

  • Yield: 2 and 1/2 cups 1x

Ingredients

Scale
  • 2 avocados
  • 5 eggs, hard-boiled and diced
  • 3/4 cup red onion, diced
  • 1/3 cup green onions, sliced
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon celery seed
  • 1/8 teaspoon garlic salt
  • 1 tablespoon olive oil, optional
  • Cracked black pepper for garnish

Instructions

  1. Mash avocados and stir in sea salt, celery seed, and garlic salt. Add red and green onions.
  2. Gently stir in diced eggs and add olive oil and cracked black pepper, if desired.
