Cranberry Pomegranate Mimosas

These Cranberry Pomegranate Mimosas can be made sweet or dry, depending on the champagne or wine you select! Fresh grapes and apple slices round out this sweet, festive drink! Chill the champagne ahead of time and this beverage will be ready in a handful of minutes! {Gluten-free + Vegan} 

I lived a perfectly good life before social media. My telephone was connected to a wall, viral was an affliction no one wanted, handwritten notes were even better if delivered during study hall without getting caught, and there’s virtually no video evidence of me making run-of-the-mill, rite-of-passage mistakes. 

Excepting, of course, that VHS tape lurking somewhere in my aunt and uncle’s closet. It houses footage of me and said beloved late aunt doing our best sweatin’ to the oldies. Richard Simmons would be proud. I’m pretty sure there is also video evidence on that same tape of me performing a one-woman one-act with a rubber chicken and fake barf. Probably I was ten, maybe even nine. Does anyone actually know? Well, that VHS tape knows. But Aunt Joy knew what she was doing. She was the Prime Minister of Quirky Good Times and she had my vote.

Y’all, she had a MINI FRIDGE IN HER BATHROOM so she didn’t have to walk far for a middle of the night snack. Tell me she wasn’t genius?!?!? Also, I tried to get my mother to put a fridge in our bathroom but I was DENIED. Our house was small enough, Mom said, so we didn’t need an extra one. If I wanted a fridge in my bathroom I had to buy my own when I became an adult or visit Aunt Joy in the meantime. I actually did put a mini fridge in my bedroom in college, never minding the apartment was no bigger than a postage stamp. My setup didn’t have the same quirky vibe as Aunt Joy’s. Because, let’s be real here, aunts just make the ordinary extraordinary.

Basically, nothing about that one-woman one-act, starring Morgan as herself, counts as a questionable decision. Neither does putting a fridge in the bathroom or the bedroom. I said what I said, I did what I did. Thank you for understanding.

But, diatribe aside, I have social media to thank for today’s titillating beverage. Because, yes, there’s a recipe in the same blog post as bathrooms, rubber chickens, and fake barf. Who’s hungry?

In all seriousness, these Cranberry Pomegranate Mimosas are perfect for New Year’s Eve or any eve, really. I happened up the idea when a friend of a friend posted a picture on Facebook of a mimosa made with these sweet and tart fruits. And I had to concoct a version for myself. So here we are, wine glass deep in champagne, cranberries, pomegranate arils, grapes, and apples. I’m here for it. And once you’ve sipped a Cranberry Pomegranate Mimosa, you’ll be here for it, too.

With that said, let’s grab a cutting board, a few wine glasses, some fruits, and champagne, and do this. Rubber chickens and fake barf optional. I aim to please.

Cranberry Pomegranate Mimosas ingredients

When picking out the fruit, fresh is best!

  • Champagne or sparkling wine. Sweet or dry? It’s totally up to you.
  • Red and green apples. Fresh, sliced, and skin left on.
  • Grapes. Green or purple, seedless. I add more to my glass if I am in the mood for a sweeter flavor.
  • Pomegranate arils. LOVE LOVE LOVE these! Is there a limit to how many you should add to your glass? Gosh, I hope not.
  • Cranberries. Fresh, halved. Like the pomegranate arils, cranberries are an excellent garnish, in addition to be a flavorful ingredient.

Tips to make Cranberry Pomegranate Mimosas

I don’t follow specific amounts. This is one of those a-handful-of-this-a-handful-of-that recipes. However, I have guesstimated a starting point. It’s perfect for parties, if you’d like to have a mimosa bar. The options are endless!

  1. Fill each wine glass about 1/3 full with chilled champagne.
  2. Add 3-4 apple slices, a handful of grapes, 1-2 tablespoons pomegranate arils, and a few sliced cranberries.
  3. Enjoy!!   

Dry versus sweet

I couldn’t decide whether to make this dry or sweet and finally decided the answer was YES. Either taste will work with this recipe. What to pair with this beverage

Cranberry Pomegranate Mimosas are as delicious as they are beautiful. Oooh, and they pair well with our very own Healthy Charcuterie Board (pictured above). As a rule, I like sweeter mimosas best. However, I happened to drink a drier version of this Cranberry Mimosa at the same time I was enjoying the Healthy Charcuterie Board. And I have to say, the sweet fruits from the platter were a lovely complement to the dry champagne. 

You can also pair this mimosa with:

  • Olive Tapenade
  • Lemon Avocado Dip
  • Marinated Greek Olives

Ingredients

Scale
  • 1 bottle champagne or sparkling wine
  • 3–4 apple slices
  • Handful of grapes (any color will do)
  • 1–2 tablespoons pomegranate arils
  • A few cranberry halves

Instructions

  1. Fill each wine glass about 1/3 full with chilled champagne.
  2. For each glass, add 3-4 apple slices, a handful of grapes, 1-2 tablespoons pomegranate arils, and a few sliced cranberries.
  3. Enjoy!!

Notes

  • If the fruits aren’t as sweet or as fresh as you’d like, then add a drizzle of agave nectar to the drink.
