Friends, what do you do with veggies that are heading toward the point of no return? Especially cauliflower, carrots, onions, and bell peppers? If you said throw them in this Cauliflower Stir-Fry, then you guessed right! 🙂 We are definitely not throwing away vegetables that still have life left in them. Furthermore, when we add turmeric and garlic we’re basically just telling dinnertime it is GAME ON because turmeric and garlic pretty much make everything better, yes? Yes.
Perhaps one of the benefits of this particular grain-free stir-fry is that although it is grain-free, Cauliflower Turmeric Stir-Fry doesn’t leave you feeling hungry afterward. It’s filling, thanks to a few eggs. If you do decide you want to add protein to your meal, then just about anything goes. Think chicken, beef, or shrimp, for example. The choice is yours!

We thoroughly enjoyed eating this one straight out of the bowl mere minutes after I finished the photo shoot. Even Twinkle, our youngest, got in on the action. It was a match made in heaven.

CAULIFLOWER TURMERIC STIR-FRY INGREDIENTS:
Below are the ingredients for your own Cauliflower Turmeric Stir-Fry!
- Cauliflower. I chop a head of cauliflower down into small rice-like pieces for my grain-free stir-fry recipes. If you’re curious about how to do that, then you’ll love this post How to Make Cauliflower Rice.
- Olive oil or coconut oil. I like either one. For this particular recipe and photoshoot, I used coconut oil.
- Spices and seasonings: turmeric, sea salt, and coarse black pepper. Amounts given are guidelines for each, so feel free to add more or less as desired.
- Fresh garlic. I include 3-4 pressed fresh garlic cloves.
- Onions. Red and green. I dice the red onion (white or yellow will also work) and then I thinly slice the green onion. I also set aside some sliced green onion for garnishing.
- Carrots. It’s totally up to you which kind of carrot you use. I happened to have baby carrots on hand, so that’s what I used.
- Bell pepper. Any color will do. Red, orange, or yellow will provide a strong contrasting flavor. You could even mix and match colors. Just aim for one total cup of bell pepper.
- Eggs. Whites and yolks included. I stir them in enough to cook through but not so long they start to scramble and overcook.
NOTE: I add one cup EACH of onion, carrots, and bell pepper.

HOW TO MAKE CAULIFLOWER TURMERIC STIR-FRY INGREDIENTS:
Below are the steps to create Cauliflower Turmeric Stir-Fry. I like to add the onions in a little later so they retain their strong, pungent flavor. However, you can add them in sooner for a neutralized flavor!
- In a large sauté pan, add the olive or coconut oil, sea salt, turmeric, garlic. Cook on high heat until the garlic turns a golden color, about 3-5 minutes. Then add the red onion, carrots, and bell pepper. Sauté until the onions become translucent, approximately another 3-5 minutes.
- Stir in the cauliflower pieces and add more oil and sea salt, if needed. Sauté until the cauliflower starts to soften. This varies but can take about 5-10 minutes. Keep an eye on the cauliflower – smaller granules often go from raw to overcooked rather quickly.
- Crack two eggs over the stir-fry and mix them in with the veggies. Stir the veggie mixture until the eggs are evenly cooked through, about 3-5 minutes.
- Next stir in the green onions and let them cook until they turn a dark green color, about 30 seconds to a minute.
- Garnish with coarse black pepper and sea salt, to taste.

VARIATIONS:
- Add a protein of choice: chicken, beef, shrimp
- Mix in a little oregano or cilantro for additional flavors!
