Caramelized Almond Slivers are the perfect salad topper or quick, on-the-go snack! Made with only two ingredients, they are ready in about 30 minutes! And when you make a batch, just prepare to make it a double or even a triple because these little treats are a crowd-pleaser! {Gluten-Free + Dairy-Free}

My stepmother made the most delicious mandarin orange salad the last time we visited. And she topped it with these Caramelized Almond Slivers. I decided I wanted to keep the magic alive when we got home and promptly made a batch. And by “batch”, I mean several batches. I also thought about how similar her salad was to my Strawberry Almond Salad. Originally, my salad just included regular ol’ almond slivers, no caramelizing included. But then I thought, Caramelized Almond Slivers are the bees knees, and maybe they would take one of our earliest recipes on the blog to a new level.

Ooh, and guess what, Spiriteds?!?!?!? THOSE CARAMELIZED ALMOND SLIVERS DID.

So now we eat these on the regular. In our salads and also by the handful. My stepmother revealed she makes several matches at a time, too, because everyone wants in on the Caramelized Almond Slivers action. And she’s right, these are not meant to be sparsely enjoyed. They are, essentially, a treat unto themselves. So plan to double or triple your recipe. Because why? Because your salads, tastebuds, and guests will thank you!

Caramelized Almond Slivers ingredients

  • Almond slivers. I buy mine pre-packaged, and there’s always a little more than one cup in the package I buy, so I just throw the extra pieces in with the batch without increasing the amount of sugar I use.
  • Granulated sugar. You’ll definitely want a granulated sweetener to make your candied almond slivers. I haven’t tried granulated stevia or monkfruit sweetener, but you are more than welcome to try!

How to make Caramelized Almond Slivers

  1. To a skillet add the almond slivers and granulated sugar. Cook on a MEDIUM-HIGH heat for about 20-25 minutes, stirring occasionally so the almonds don’t burn. As the almond slivers cook, stir more frequently because they’ll go from under cooked to overcooked in a matter of seconds.
  2. When the desired doneness is reached, transfer the almond slices to a piece of parchment paper to let cool. Once cooled, then break the caramelized almond sliver clumps apart by hand. Store them in an airtight container at room temperate for up to 5 days (periodically check the freshness to ensure they don’t go stale).

  • Do I need to grease the pan first? No, the oils from the almond slivers will pool in the pan as the almonds heat up.
  • How to do I know when the almond slivers are ready? This depends largely on how cooked you want your slivers to be. I find in my small skillet, it takes about 25 minutes and the almond slivers are pretty well browned.
  • What do I do if some slivers are browned and others are still lighter in color? When this happens, I stir them so the browned pieces are on top and the under-cooked portions get a chance to cook at the bottom of the pan. If you have some slivers that are really cooked, then scoop them out of the pan early and place them on the parchment paper.
