Caper Spinach Salad is a delicious, mouthwatering, briny salad recipe that needs just FOUR ingredients. Fresh spinach, capers, a hard-boiled egg, and olive oil come together for a tangy lunch recipe! {Paleo}

Ingredients

  • 23 handfuls fresh spinach
  • 23 tablespoons capers (with a little juice included)
  • 1 hard-boiled egg, peeled and chopped/diced/sliced (your preference)
  • Olive oil 

Instructions

  1. Place the fresh spinach on a large plate or a deep bowl.
  2. Sprinkle on, stir in, or layer the egg. Scoop the capers out of their jar, along with a little of the caper juice, and sprinkle them over the top of the salad.
  3. Drizzle olive oil over the salad ingredients and serve immediately.   

    Notes

    • Ingredient amounts listed are a suggestion. This is a throw-it-all-together kind of salad. Add as much or as little of each ingredient you desire.
    • I usually add olive oil by the tablespoonfuls until I have an amount that matches what I’m in the mood for.
    • For a meal prep option, layer a mason jar first with the olive oil and capers, followed by the spinach, and, finally, topped with the chopped egg. Then shake everything together just prior to eating or transfer to a plate or bowl. 
    • This salad is best enjoyed right after it’s made.
