Baked Tomato Cup with Bacon and Eggs

Ingredients

  • 2 tomatoes
  • 4 eggs
  • 1 lb bacon
  • 1 avocado, diced
  • 1/4 cup green onion, diced
  • 1/4 cup red onion, diced

Instructions

  1. Set oven to 400 degrees.
  2. In a skilled, fry bacon until it is crispy. (It should be easy to crumble, rather than tear.)
  3. As bacon is frying, wash tomatoes and trim tops off (just enough to remove leaves).
  4. Slice tomatoes from top to bottom and scoop out centers with a spoon. Set aside.
  5. Pour olive oil in an 8×8 glass baking dish and place tomatoes inside.
  6. Crack an egg into each tomato.
  7. Bake in the 400-degree oven for 15-20 minutes, or until the whites have firmed.
  8. Remove from oven and top with crisp bacon pieces, diced avocado, green onion, and red onion.
  9. Serve immediately.

Notes

I found I could reduce the prep time by getting the bacon started while I worked on prepping the tomatoes, eggs, and toppings, finishing the bacon while the tomatoes and eggs were baking in the oven.
