Baked Cinnamon Apples

These Baked Cinnamon Apples are made with cinnamon, nutmeg, allspice, and coconut sugar for a delicious caramelized fruit bake! And while they make the perfect side dish, they also easily double as a breakfast or brunch recipe, too! {Paleo + Vegan}

  • 6 apples (I used Gala apples for this recipe), peeled and cut into wedges [See Notes for varying quantities]
  • 1 tablespoon lemon juice
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla
  • 1 1/2 tablespoons tapioca flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/8 teaspoon sea salt
  • 4 tablespoons solid coconut oil, divided

Instructions

  1. Set oven to 350 degrees. Grease a 9×13 pan with coconut oil. Set aside.
  2. In a large bowl combine the apples, lemon juice, coconut sugar, maple syrup, and vanilla. Then add the tapioca flour, cinnamon, nutmeg, allspice, and sea salt. Stir until apple slices are evenly coated. Pour apples into the pan, spreading them out as evenly as possible to prevent overlapping. Place one tablespoon of coconut oil in each of the four corners of the pan.
  3. Bake covered for 35 minutes. Then bake uncovered for another 15 minutes. Enjoy warm or refrigerate for up to four days.

    Notes

    • The actual number of apples used will vary depending on size. I have made this recipe using 9-10 small apples or as few as 4 large apples. Use only as many as will layer evenly in the pan without overlapping.
    • When reheating in a microwave, make sure not to overcook the apples. Use the REHEAT option, if available, on a low temp for a short period of time.
