Hand to God this grain-free baked fruit recipe smells like a cinnamon candle. Other than the mouthwatering, satisfying taste and the ease with which this recipe is made, that’s pretty much all you need to know about these Baked Cinnamon Apples. Please note, I totally intended for this to be a side dish recipe (I’m looking right at you, Thanksgiving). But these Baked Cinnamon Apples have morphed into a breakfast recipe, too. Also a snack recipe. Dessert, even? And I refuse to stop brainstorming excuses to eat this delicious concoction.
I was inspired by Paleo Running Momma’s recipe for Caramel Cinnamon Baked Apples. I made adjustments to the amount of apples used and the types and amounts of spices. Because I will look for any excuse to add allspice to recipes. I’ve even tucked it into our popular savory Avocado Quinoa Salad.
These juicy, caramelized apples beckon cooler weather; warm, fuzzy socks; a captivating book; and a soft, plushy throw. They are the sweet bite during a family meal or the welcoming start to the morning. Even the younger-born gets in on the action while we tinker in the kitchen. I caught her nibbling bites before we put the pan in the oven. She has particularly good taste!

Baked Cinnamon Apples ingredients
Below are the ingredients for your own Baked Cinnamon Apples. Ingredient substitutions are listed where applicable.
- Apples. I use Gala or Pink Lady apples, but this is a recipe where you can explore all kinds of flavor combos just by changing out the apples!
- Lemon juice. Fresh or refrigerated will work.
- Coconut sugar and 100% pure maple syrup. These two ingredients are right at home here. You can use 100% pure honey or agave nectar in place of the maple syrup, if desired.
- Vanilla. One teaspoon will sweeten the dish.
- Tapioca flour. This fine-textured flour helps adhere the ingredients to the apples to form what will become the caramelized sauce during the baking process.
- Spices. Cinnamon, nutmeg, and allspice.
- Sea salt. A pinch will do.
- Coconut oil. Pepper the top of the apples with solid pieces of coconut oil.
How to make Baked Cinnamon Apples
Below are the instructions to make Baked Cinnamon Apples. Get ready for your house to smell like a fall wonderland of scents and flavors!
- Set an oven to 350 degrees. Grease a 9×13 pan with coconut oil. Set aside.
- In a large bowl combine the apples, lemon juice, coconut sugar, maple syrup, and vanilla. Then add the tapioca flour, cinnamon, nutmeg, allspice, and sea salt. Stir until apple slices are evenly coated. Pour apples into the pan, spreading them out as evenly as possible to prevent overlapping. Pepper the top of the apples with the roughly chopped solid pieces of coconut oil.
- Bake covered for 35 minutes. Then bake uncovered for another 15 minutes. Enjoy warm or refrigerate for up to four days.
Helpful notes
- I find the actual number of apples is less important than having enough to cover the area of a 9×13 pan without overlapping.
- Cut apples into slightly thick wedges. If they are too thinly sliced, they’ll turn to mush during the baking process.
- When reheating in a microwave, make sure not to overcook the apples. Use the REHEAT option, if available, on a low temp for a short period of time.

Ingredients
- 6 apples (I used Gala apples for this recipe), peeled and cut into wedges [See Notes for varying quantities]
- 1 tablespoon lemon juice
- 1/4 cup coconut sugar
- 1/4 cup 100% pure maple syrup
- 1 teaspoon vanilla
- 1 1/2 tablespoons tapioca flour
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/8 teaspoon sea salt
- 4 tablespoons solid coconut oil, divided
Instructions
- Set oven to 350 degrees. Grease a 9×13 pan with coconut oil. Set aside.
- In a large bowl combine the apples, lemon juice, coconut sugar, maple syrup, and vanilla. Then add the tapioca flour, cinnamon, nutmeg, allspice, and sea salt. Stir until apple slices are evenly coated. Pour apples into the pan, spreading them out as evenly as possible to prevent overlapping. Place one tablespoon of coconut oil in each of the four corners of the pan.
- Bake covered for 35 minutes. Then bake uncovered for another 15 minutes. Enjoy warm or refrigerate for up to four days.
Notes
- The actual number of apples used will vary depending on size. I have made this recipe using 9-10 small apples or as few as 4 large apples. Use only as many as will layer evenly in the pan without overlapping.
- Cut the apples into slightly slick wedges. If they are too thinly sliced, they’ll turn to mush during the baking process.
- If you aren’t sure how many apples to peel and cut, hold off on greasing the baking dish, and instead peel and cut a handful of apples, placing them in a single layer in the baking dish until the bottom of the dish is covered. When you’re satisfied with the quantity, remove the apple wedges from the baking dish and place them in the large bowl to begin preparing the recipe. Wipe the baking dish clean and then grease it with coconut oil.
- When reheating in a microwave, make sure not to overcook the apples. Use the REHEAT option, if available, on a low temp for a short period of time.
