Ingredients

  • 4 zucchinis, spiralized and drained
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 pound bacon, crispy-fried and crumbled
  • 2 cups tomatoes, grape or cherry (halved) or large tomato (diced)
  • 1/2 cup green onion, sliced
  • Dash of garlic powder
  • Black pepper, to taste
  • Sea salt, to taste (optional)

Instructions

  1. Spiralize zucchini noodles and then lay them out on paper towels, napkins, or a thin dish towel to let the excess water drain. While the zoodles are draining, fry bacon in a skillet. For best results, fry the bacon to a crispy consistency. This will make crumbling the bacon over the salad much easier to do.
  2. In a large mixing bowl, combine zucchini noodles, olive oil, and lemon juice. Add in crumbled bacon, tomatoes, and green onion. Then sprinkle with garlic powder and stir evenly. Top with black pepper and sea salt, if desired.

Notes

Paleo bacon is available in the marketplace. For my recipes, I purchase bacon from a local farmer who sells it through our local grocery store. It isn’t officially marked paleo, however it is gluten-free and contains ingredients that work for our family’s needs. With diligent searching, both on the internet and in your local community, you may find a source that works best for you, too. And I often add more than a pound of bacon to these types of recipes, if I am in the mood for extra crunch! Best of luck!
