Yesterday was National Daiquiri Day, and we definitely had a recipe to celebrate ~ Raspberry Lime Daiquiri Popsicles. But what if you don’t drink alcohol? Or you simply want something else? Maybe you’re the designated driver at the party. What then? This, Spiriteds, this thirst-quenching drink. Pineapple Fresca Mocktail is where the party’s at. It’s refreshing, citrus-y, and completely alcohol-free.
I’d love to say I invented it myself. But, alas, that would be a lie. In fact, a dear friend introduced it to me years ago at a summer shindig. K-Hubs and I were immediately hooked. It’s the solution to stifling summer nights when the humidity is oppressive and the air is thick.
For this round, I added a tantalizing twist. Frozen raspberries to be specific, which made this mocktail a little more OMIGOD. Wisest decision EVER. Just add that handful or two of frozen berries and let the ingredients work their magic. I had never thought about combining pineapple and raspberries before, but really, these two should just be together for LIFE. I also love how the color gradually changes from a summery yellow to a tropical pink as the raspberries thaw in the glass!
And because it boasts just three base ingredients, Pineapple Fresca Mocktail recipe is easily adaptable for parties large and small. I throw the frozen fruit in right before serving, and I keep extra ice cubes nearby. You could also throw in a few pineapple chunks, if you have them, and turn your mocktail into a mock sangria. Please note, too, the recipe below is for one standard size can of Fresca and one small can of pineapple juice, which will yield about 1-2 servings. From there, you can adjust up if you’re serving it to the masses, which you should totally just do, by the way because they’ll love you for it.

- 12 ounces Fresca (original citrus flavor)
- 6.5 ounces pineapple juice
- 1-2 handfuls frozen raspberries or other desired fruit
- Stir together Fresca and pineapple juice and add frozen berries just before serving.
